For a healthy, portable breakfast, stick your muffin tin in the freezer, not the oven! Fill your muffin tin to the brim with healthy fresh fruit, Greek yogurt, and cereal for a granola-like parfait that freezes into perfectly portioned frozen breakfast bites.

What You'll Need

  • 1-2 bananas, cut into 1/4-inch thick slices
  • 1 1/4 cups whole milk Greek yogurt
  • 1/3 cup Chex, you can also substitute other cereals or granola
  • 1/4 cup assorted fresh fruit, chopped

How to Make It

  1. Depending on how big your muffin tin is, place 1-3 banana slices in the bottom of each cup. If you make these in a regular sized muffin tin you won’t fill the ingredients to the top.
  2. Top the bananas with a dollop of Greek yogurt. You can also use a freezer bag as a piping bag to carefully pipe in the yogurt for a more polished look. Next add some Chex and fresh fruit.

  3. Freeze for about 2 hours or until frozen.
