There are a few tricks to working with ice cream.
It usually must be softened a bit before you can spread it in a pie shell or layer it between cookies. You can soften ice cream in the microwave oven at 30% power for 20 to 30 seconds. Make sure to check the ice cream at the 20 second point, then let stand for 1 to 2 minutes. Ice cream can also be softened by letting it stand at room temperature for 15 to 20 minutes.
And you can use your stand mixer to soften ice cream too; beat the ice cream on medium for 30 to 40 seconds until the consistency softens.
When your confection is completed, freeze it for at least 3 to 4 hours before serving, or follow instructions in the recipe. Remove the dessert from the freezer for 20 to 30 minutes before serving so it softens slightly and the flavors can bloom.
If you're making your own ice cream, you can freeze it in a traditional crank ice cream freezer, using proportions of 2 cups of crushed ice covered with 1/2 cup of rock salt. The ice cream will be much smoother and simply better if you let the custard sit in the refrigerator overnight before freezing.
