These spiced cookies are a little unconventional, but they quite delicious if given a chance. What I like best about these cookies is their texture– they are thin and chewy and crispy all at once. And, the flavor is, well, flavorful... with a ton of spices that blend beautifully to create this unique cookie.
Garam masala (from Hindi: garam ("hot") and masala (a mixture of spices) is simply a blend of spices that is used in North Indian cuisine. You can find this spice blend at any Indian grocery and many well stocked supermarkets and specialty stores carry it as well. If you can't find it already blended up near you, then there are many recipes available online--such as this one--that will enable you to make your own.
Many garam masala spices are a blend of coriander, cardamom, black cumin, cinnamon, celery, black pepper, allspice, cloves and anise. But, depending on the brand (or maker if homemade), yours may differ just a bit in ingredients. This is okay! No matter what spices yours includes, you are sure to get a flavorful, spiced cookie, and a touch of cocoa at the ends, truly tops them off. Spicy, sweet and slightly chocolaty--could you really ask for anything more?
Preheat your oven to 375 degrees Fahrenheit. Line a large cookie sheet with parchment paper or a large silicone mat.
In a large mixing bowl, cream together the sugar and the margarine until smooth. Add in the vanilla extract, apple cider vinegar, and stir well.
Next, in a separate medium sized bowl, whisk together the garam masala, baking powder, and all purpose flour until well combined. Gradually add the flour mixture into the creamed sugar mixture until a dough forms.
Using a tablespoon, scoop out round balls onto your prepared cookie sheet and place each cookie about 3 inches apart, leaving plenty of room around each as these cookies spread considerably--that's what gives them their chewy/crispy texture!
Place onto the middle rack of your oven and bake in preheated oven for about 10 minutes, or until the cookies have flattened considerablyand have lacy edges. Make sure the cookies are completely round when they go on the sheet as they will flatten out on their own, and if too flat before baking, they may burn!
While they are still warm, sprinkle a touch of cocoa powder on each cookie. Serve warm or allow to cool completely before serving. Store in an airtight container for up to 5 days.
