Grilled Bacon Wrapped Scallops with Lemon Aoili

This simple grilled scallop recipe is perfect served by itself as an appetizer, or it can be made into a delicious accompaniment to any salad. It is the versatility and simplicity of this dish that really makes it works. Oh, and the lemon aioli is quite delicious too. 

What You'll Need

  • 2 pounds/900 g large fresh scallops
  • 8 slices of bacon
  • 2 tablespoons/30 mL red wine vinegar
  • 2 tablespoons/30 mL​ olive oil
  • Dash black pepper (or to taste)
  • For the Aioli:
  • 1/2 cup/120 mL mayonnaise
  • 1 tablespoon/15 mL fresh lemon juice
  • 1 tablespoon/15 mL flat leaf parsley (finely chopped)
  • 1 tablespoon lemon zest (zest of 1 medium lemon)
  • 1 clove garlic (minced)
  • 1 teaspoons/10 mL Dijon Mustard
  • Dash salt (or to taste)

How to Make It

1. Combine vinegar, oil, and black pepper in a medium bowl. Add scallops to the mixture and toss to coat. Cover and allow to sit for 5 to 10 minutes at room temperature.

2. Preheat grill for medium-high heat. Cut bacon into thirds. Wrap a piece of bacon around each scallop and thread onto skewers. There should be 3-4 scallops per skewer. Place on a lightly oiled grill rack and cook for 3-4 minutes per side.

When the scallop is opaque in color, remove from grill and serve.

3. Serve these with a sprinkle of lemon and perhaps your favorite dipping sauce for a delicious appetizer, or serve over fresh salad greens or lemon rice for a tasty dinner.

4. To prepare lemon aioli: combine mayonnaise with lemon zest (remember to zest first), lemon juice, garlic, salt, pepper, and parsley.  Stir to combine.  If making ahead of time, cover bowl with plastic wrap and place into the refrigerator. Serve with bacon wrapped scallops.  Double recipe if needed.
