This is a fantastic chicken kofta recipe that you can serve in a pita or by itself with a side salad. Either way, you'll be happy with the results.

What You'll Need

  • 1 pound (450 g) ground chicken
  • 1 cup (240 mL)  ​panko bread crumbs
  • 1 egg (lightly beaten)
  • 1 small chili pepper (seeded and minced)
  • 1-2 cloves garlic (minced)
  • 1 tablespoon (15 mL) cilantro (finely chopped)
  • 1/2 teaspoon (2.5 mL) cumin powder
  • 1/2 teaspoon (2.5 mL) onion powder
  • 1 1/2 teaspoons (7.5 mL) sea salt

How to Make It

  1. Preheat grill for medium heat.
  2. In a large bowl, combine all ingredients until well mixed through. Form mixture into 6-8 koftas (a sausage shape) around a metal skewer.
  3. Place koftas on a well-oiled grill grate and cook for 10-12 minutes making sure to carefully turn occasionally to avoid burning. Once cooked through (165-175 degrees F/75-80 degrees C), remove from heat.
  4. Serve on sandwich rolls or pita with favorite condiments.
