Grilled Italian Sausage Po' Boy Recipe

A great recipe for a hardy and flavorful Sausage Po'Boy grilled sandwich, with a fantastic mustard-mayonnaise. While this recipe calls for hot Italian sausage links, you can certainly use Andouille sausages. 

What You'll Need

  • 4 hot Italian sausage links
  • 4 sub sandwich buns
  • 2 cups lettuce (shredded)
  • 1 small red onion (sliced)
  • 1 large tomato (sliced)
  • 1/4 cup tablespoons mayonnaise
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon hot sauce

How to Make It

  1. Mix mayonnaise, mustard, garlic and hot sauce in a bowl.
  2. Cover the mix with plastic wrap and place in refrigerator until ready to use.
  3. Preheat grill for medium heat.
  4. Place sausage on grill and cook for 8-10 minutes, turning occasionally.
  5. When the sausage is browned and fully cooked (internal temperature of 165 F), remove from heat and split each sausage down the middle.
  6. Slather mustard mixture onto sandwich buns, add garnish and place sausages on last.
  1. Serve with your favorite sides and a nice cold drink.
