Grilled Lemon and Balsamic Sole Fillets

This fillet of sole gets marinated in a fantastic lemon-balsamic mixture, then grilled to perfection. Serve with a side of grilled vegetables or salad greens for a healthy, delicious meal.

What You'll Need

  • 1 1/4 pound/575 mL sole fillet, 1/8 inch to 1/4 inch thick
  • 1/4 cup/60 mL balsamic vinegar
  • 1/4 cup/60 mL lemon juice
  • 2 teaspoons/10 mL fresh parsley
  • 1 small yellow onion, chopped
  • 1 teaspoon/5 mL dry mustard
  • lemon slices

How to Make It

Rinse and dry fillets. Place fish in a shallow baking dish. Combine vinegar, lemon juice, mustard, and onion in a small bowl. Mix and pour over fish. Cover and refrigerate for 20-30 minutes.

Preheat grill. Remove fish from marinade and place on grill. A grill basket might be a good idea here. Grill on high heat for about 4 to 6 minutes or until fish reaches an internal temperature of at least 145 degrees F.

Once cooked through, remove from grill, garnish with lemon slices and serve.
