These wonderful salmon cakes can be served alone or as a nice addition to any salad. You can also serve them up burger style. The choice is yours!

What You'll Need

  • 1 1/4 pounds/575 g of salmon fillet (diced into small pieces)
  • 1/2 cup/120 mL breadcrumbs (preferably plain)
  • 1/4 cup/60 mL mayonnaise
  • 3 green onions (finely chopped)
  • 3 tablespoons/45 mL fresh flat leaf parsley (chopped)
  • 2 tablespoon/30 mL Dijon mustard
  • 1 tablespoon/15 mL fresh lemon juice
  • 2 teaspoons/10 mL lemon zest
  • 1 teaspoon/5 mL salt
  • 1/2 teaspoon/2.5 mL black pepper
  • 2 tablespoons olive oil

How to Make It

1. Preheat grill for medium heat.

2. Place salmon, into food processor. Blend until mixture is coarsely chopped. Transfer to a large bowl.  Add bread crumbs, mayonnaise, finely chopped green onion, chopped parsley, Dijon mustard, lemon zest and juice, salt, and black pepper. Gently mix until all ingredients are well combined.

3. Shape 8, equal sized patties out of mixture. They should be 1/2 an inch thick.

Brush with olive oil on both sides.

4. Using a large pair of tongs and folded paper towel, oil grill grates really well.  This will create a nice non-stick surface.  Make at least 3-4 passes.

5. Place salmon cakes onto the grill. Work carefully to keep the cake together. Cook for 3-4 minutes per side, or until cooked through.  Remove from grill.

6. If serving the salmon cakes as a burger, oil insides of hamburger buns and place onto grill, oiled side down.  Shut lid and let bread toast for 2 to 2 1/2 minutes.  Remove and assemble burger with your favorite toppings.
