This is a great grilled sandwich for any occasion. Summer cookouts, family dinners, and the big game come to mind. If you're not a fan of spice, you can omit the jalapeno pepper.

What You'll Need

  • 1 pound medium shrimp (peeled and deveined)
  • 1 large catfish fillet
  • 1/2 cup red bell peppers
  • 1/3 cup mayonnaise
  • 1/4 cup lemon juice
  • 1/2 small onion (diced)
  • 2 cloves garlic (minced)
  • 2 tablespoons mustard
  • 2 tablespoons parsley (or cilantro; fresh and chopped)
  • 1 jalapeno pepper (seeds removed)
  • 1 tablespoon olive oil
  • 2 teaspoons Creole Seasoning
  • 4 sub sandwich rolls

How to Make It

  1. Place peeled shrimp in large dish.
  2. Cut catfish into 1 inch strips and add to shrimp. Season with Creole seasoning, cover and allow to sit in refrigerator for 1 hour.
  3. Blend oil and fresh lemon juice together. Pour mixture into seafood bowl, cover, and allow to marinate for an additional 15-20 minutes.
  4. While seafood is marinating, cut bell peppers and jalapenos into strips. Mix peppers with mayonnaise mustard, parsley, and minced garlic.
  1. Preheat grill for medium-high heat.
  2. Remove seafood from refrigerator and discard marinade. Place seafood on a well oiled grill grate or oiled grill basket.
  3. Cook fish for 6-7 minutes and shrimp for 3-4 minutes, turning once.
  4. Remove from grill and arrange sandwiches with pepper mayonnaise, garnish of choice, and seafood.
