This herb-stuffed salmon is perfect for the grill. Make sure that your cooking grates are well oiled and that you grill the salmon indirectly. There are a couple variations to this recipe that might make it easier for you: You can grill the stuffed salmon indirectly on the grill, or you can put the stuffed salmon packets on a cedar plank to make it easier to move on and off the grill.

What You'll Need

  • 2 pounds salmon fillets (cut into 4 equal pieces)
  • Salt and pepper, to taste
  • For Filling:
  • 2 lemons
  • 1 cup (240 mL) black olives (pitted and minced)
  • 1/2 cup (120 mL) Parmesan cheese
  • 1/4 cup (60 mL) fresh dill
  • 1/4 cup (60 mL) fresh parsley
  • 1/4 cup (60 mL) fresh basil

How to Make It

1. Zest and juice both lemons. Combine with remaining filling ingredients. Divide mixture into four equal portions and place in the center of each of the four pieces of salmon. Fold corners of the salmon fillets toward the center, making a pocket around the stuffing and secure with toothpicks. 

2. Preheat grill and prepare for indirect grilling. Season fish with salt and black pepper. Place stuffed salmon fillets on medium-hot grill and well-oiled grill.

Close lid and grill until salmon has cooked through (about 20 minutes or until internal temperature reaches 145 to 150 degrees F). The salmon should be opaque in color. Stuffing should appear browned and the cheese completely melted.

3. Alternatively, you can place these stuffed salmon fillets on a cedar plank, soaked in water. With this method you will want to place the plank directly over the fire and grill for about 20 minutes or until the salmon has cooked through (see above for required temperature).
