I recently became the proud owner of an ice cream machine, something I always said I didn't need because there were so many good store bought ice creams. Hmm. As soon as I remember what I was thinking when I said that I will let you all know. The point is that there actually are some fantastic packaged ice creams in the standard flavors like vanilla, chocolate and strawberry. And there are a handful of well known companies making interesting flavor combinations with fun names. But I tend to look at those and think, if only it didn't have this ingredient or had more of that ingredient, etc. That sounds like a woman who needs her own ice cream maker, doesn't it?
So, here we are. I perfected my vanilla base and then began playing around with all the flavor combos I wished I was seeing in the stores. And when I got to the cookie dough flavor ideas, I thought about my new favorite chocolate chip tahini cookies and that led to thinking about tahini which led to thinking about halva. It actually doesn't take that much coaxing for my brain to start thinking about halva.
Yes, of course I was going to make halva ice cream. That wasn't even a question. But do I just make a vanilla base and sprinkle bits of halva candy in there. Good but not great. But what is halva, exactly? It's raw tahini (sesame paste), sugar or honey and heavy cream. Well, ice cream is basically sugar, cream and a flavoring so I mixed up my perfected vanilla base and whisked in some tahini. Halva! Seriously, it tasted exactly like halva only in liquid form. I poured it into my ice cream maker and paced around for the 40 minutes it took to churn because I was so curious about the result.
My patience was rewarded and my good idea became great. And when I sprinkled the actual halva candy on top of the halva ice cream, great became mind blowing.
If your ice cream maker requires pre-freezing the bowl, do so.
In a large bowl, whisk together the milk, cream, sugar, vanilla, salt and sesame paste. Pour into your ice cream maker and follow manufacturer's instructions to churn for 40 minutes.
Freeze for at least 4 hours before serving and garnish with the crumbled halva pieces, if using.
