What You'll Need

  • 2 tablespoons extra virgin olive oil
  • 1 medium onion, sliced
  • 4 bone-in pork chops
  • Salt and pepper
  • 4 tablespoons all-purpose flour
  • 3 cloves garlic, finely minced
  • 1 heaping tablespoon chopped parsley
  • 1 teaspoon dried leaf sage
  • 1/2 teaspoon dried leaf thyme
  • 1/2 teaspoon dried rosemary
  • 1 tablespoon butter
  • 1 cup chicken broth

How to Make It

  1. Heat the olive oil in a large skillet or sauté pan over medium heat. Add onions and saute, stirring, until lightly browned.
  2. Meanwhile, sprinkle the pork chops with salt and pepper and dust with flour. Add the pork chops to the skillet and brown on both sides, about 4 minutes on each side.
  3. Add the garlic, herbs, chicken broth, and butter; reduce heat to low, cover, and simmer for 25 minutes. If the pork chops are very thick, simmer for 5 to 10 minutes longer.
