These homemade biscuits get extra height and softness from a combination of cake flour and all-purpose flour. If you have a difficult time with biscuits, try this method, and be sure to handle the dough as little as possible. 

These all-butter biscuits are rich and flaky. They're made with half cake flour and half all-purpose.

The cream of tartar and baking soda may be replaced with an equal amount of baking powder.

What You'll Need

  • 1 cup cake flour
  • 1 cup all-purpose flour
  • 2 teaspoons cream of tartar (see tips)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 stick (4 ounces) cold unsalted butter, cut into 1/4-inch pieces
  • 3/4 cup half and half or light cream

How to Make It

  1. Heat the oven to 400 F.
  2. In a medium bowl, sift together the cake flour, all-purpose flour, cream of tartar, baking soda, and salt.
  3. Using a pastry blender, cut the butter into the flour until the mixture resembles small peas.
  4. Add the half and half; stir just until ingredients are moistened and dough forms a soft ball.
  5. Knead the dough in the bowl 2 or 3 times, just until the dough is smooth and soft. A light hand is best!
  1. On a floured surface, roll or pat the dough to a thickness of about 3/4 of an inch.
  2. Cut out biscuits with a 2 1/2- to 3-inch round or square cutter.
  3. Gather up dough scraps, gently reroll, and repeat the procedure until dough is used up.
  4. Place biscuits on an ungreased or parchment paper lined baking sheet.
  5. Bake the biscuits in the center of the preheated oven until golden brown, about 12 to 15 minutes.
  6. Serve biscuits hot, with butter.

Expert Tips

Baking powder is basically a combination of 2 parts cream of tartar and 1 part baking soda. You may replace the cream of tartar and baking soda with 3 teaspoons of baking powder.

"I was out of half and half and I used the same amount of whole milk. I used 1 tablespoon of sugar to offset the baking soda taste. I removed the biscuits from the oven 2 minute before the cooking time elapsed and brushed with melted butter and place them back in the oven for a couple minutes.
