These are wonderful with a ham dinner, or serve for breakfast with apple jelly or your favorite preserves. If you use canned sweet potato, rinse any excess syrup off before mashing.

     The classic biscuit. These buttermilk biscuits are made with a combination of shortening (or lard)  and butter. A soft Southern flour, such as White Lily, will make them even lighter and flakier.

     I love these biscuits as they are, but about 1/2 cup of shredded Cheddar cheese could be added along with the bacon and chives. These tasty biscuits are great for breakfast, dinner, or holiday meals. They also make great slider buns for chicken salad or little burgers.

     These biscuits are made with butter, a little olive oil, and lots of fresh chopped parsley. It's a great biscuit to serve with fried chicken or a hearty soup or stew, and they're so easy to fix and bake. These would also be great biscuits to use on a chicken and biscuit casserole or pot pie.

    Pepper jack cheese and a scant teaspoon of cayenne pepper give these biscuits great flavor and texture. Bake these biscuits to go with chili or a tortilla soup, or make them for a brunch or an everyday meal. Feel free to add more or less cayenne pepper to adjust the heat in these biscuits.
