For the leanest and most flavorful ground pork, grind it yourself. I used a lean pork loin for this recipe. If you don't have a meat grinder, a food processor will usually do a good job of mincing the meat. Freshly ground meat can save money, and it's much better tasting.

What You'll Need

  • 1 pound extra-lean ground beef
  • 1 pound lean ground pork
  • 8 ounces (about 1 cup) red pepper or pepper and onion relish, divided *
  • dash cayenne pepper, optional
  • 1 large egg
  • 1 cup fresh soft bread crumbs
  • 1/2 cup milk
  • 1 1/2 teaspoons salt
  • 1/2 cup ketchup

How to Make It

*Dickinson's Sweet 'n Hot Pepper and Onion Relish, Braswell's Pepper Relish, Stonewall Kitchen's Farmhouse Red Relish, or similar sweet bell pepper relish blend.

Coat a 9x5x3-inch loaf pan with cooking spray. Heat oven to 350°.

Combine the ground beef, pork, 1/2 cup relish, egg, bread crumbs, milk, salt, and pepper. Mix gently until well combined. Pack loosely into the prepared loaf pan. Mix the ketchup with the remaining relish and refrigerate.

Bake meatloaf for 1 hour and 10 minutes, then top with the ketchup mixture. Return to the oven and bake for 10 to 15 minutes longer.

Serves 6 to 8.
