How to Make Chocolate Drizzled Strawberries

    Strawberries and chocolate are a luscious combination which can be used as a glorious cake garnish on many different occasion cakes such as wedding cakes, Valentine's Day cakes, and Shower cakes.  Fresh berries can be used with many flavours of cakes as well with great success, from vanilla to chocolate and tender almond.

    Pick Perfect Unblemished Strawberries

    You will need

    • Fresh Strawberries, preferably in season
    • Good Quality Chocolate
    • Parchment
    • Fork
    • Saucepan
    • Small Bowl

    Chocolate drizzled strawberries are only as pretty as the strawberries you pick for this garnish. Make sure the berries are bruise free, very fresh, and have a pleasing color. The best strawberries to use for this decoration is seasonal fruit because it tastes better and usually has not travelled too far to reach the store or market. Carefully wash the fruit either by hand in cool water or...MORE in a sieve taking care to renove all specks of dirt. You will need to wash your berries even when purchasing them organic because these fruit are grown very close to the dirt and can be very gritty. Then use a clean dishtowel to blot the strawberries dry to ensure the chocolate sticks to the outside of the fruit.

    Melt the Chocolate

    You don't need too much chocolate to create a pretty design on the berries, maybe a cup for a couple dozen berries. Place a small saucepan with about an inch of water in the bottom on low heat and place a small metal bowl on top of it. You are creating a double boiler without having to purchase expensive cookware. Make sure the small bowl does not dip into the water of your chocolate could burn and bring the water to a gentle simmer. Place several squares of good quality chocolate in a small...MORE metal bowl.Stir until the chocolate is completely melted taking care not to scorch it and remove bowl from heat. Also make sure your utensils are not wet or your chocolate could seize into an unusable mass.

    Drizzle Chocolate on Strawberries

    It is important to drizzle the strawberries while the chocolate is smooth and fluid to get narrow even lines on the fruit. Spread the strawberries on a piece of parchment and using a fork drizzle the chocolate in thin streams over the berries. There is no set pattern to follow but take care not to create clumps. If the chocolate starts to cool down put the bowl over the simmering water until it melts again. Try alternating white and dark chocolate for an interesting effect. You can also spoon...MORE the melted chocolate into a piping bag topped with a small round tip or a folded paper piping bag and use that tool instead to create more precise lines. Colored candy melts are also acceptable for drizzling berries, such as pink or pastel yellow. These more colourful garnishes are lovely for Easter cake designs or Valentine's Day. Allow the chocolate to harden on the strawberries and store in the fridge until needed.
