    How to Make Crepes from Scratch

    Making crepes at home is as easy as cooking pancakes. You don't need a special gourmet crepe pan, either. A small nonstick pan will work just fine.

    Here is a simple step-by-step method for making crepes. The accompanying photos will show you exactly how to create these delicious treats for your guests or family.

    You can follow this basic crepe recipe which can be modified to add sugar for dessert crepes.

    Making the Crepe Batter

    Whisk the flour, eggs, milk, salt, melted butter and optional ingredients in a bowl until smooth. The batter will be watery.

    Heat up a nonstick pan over medium-high heat.

    Using a ladle, pour a few tablespoons of crepe batter onto the center of the pan.

    Coating the Pan with Batter

    Holding onto the handle of the pan, remove it from the heat and swirl the pan so the batter coats the bottom of the pan. You want to make the coating as thin as possible. If you have holes in the crepe, go ahead and add more batter to the pan to cover them.

    If you are using a pan with sloped sides, use the side surface to increase the size of the crepe. Swirl the pan around so batter evenly coats the sides. Return the pan to heat.

    Loosening the Crepe

    The batter will quickly dry and loose its shine. It's time to turn the crepe over.

    Use a non-metal spatula to loosen the crepe from the pan.

    Flipping the Crepe

    Use the spatula to flip over the crepe. It's perfectly acceptable to use your fingers if necessary. If you're really talented, try flipping the crepe over in the air using just the pan.

    Finish turning over the crepe and make sure that all of the crepe bottom is in contact with the pan.

    Finish cooking the crepe. It will only take about 30 seconds for the second side to cook.

    Removing the Crepe from the Pan

    After the crepe has finished cooking, gently slide it out onto a plate. If you like, you can stack the crepes in an ovenproof dish and keep them warm in the oven set at 195 F.

    Filling the Crepe

    Now it's time to fill the crepe. Place the filling about a quarter of the way in on one side of the crepe.

    • Sweetened Ricotta
    • Fresh Fruit
    • Peanut Butter and Bananas
    • Cheese
    • Pulled Pork
    • Apple or Cherry Pie Filling

    Rolling the Crepe

    Using your fingers, roll the crepe around the filling. Place the crepe seam side down on the plate so it doesn't open. Your crepe is now complete.
