Heat the Oil and Peel the Green Plantain
This photographic guide follows my tostones recipe.
Heat the oil to 375 degrees F.
While the oil is heating up, peel the green plantains and then cut them into 3/4-inch slices.

Fry the Slices
Fry the slices in the hot oil for 3 minutes. They should be a light golden color and semi-soft.Continue to 3 of 4 below.

Smash Into Rounds and Refry
Remove the plantain slices with a slotted spoon and drain on paper towels. Maintain the oil’s temperature.
When the plantain slices are cool enough to handle (about 1 minute), smash them into flat rounds.
Fry the rounds in the hot oil for 3 minutes. They will turn crisp and golden brown.
Tip: If you don't have a tostonera, like the one shown in the photo, you can use a meat mallet or large bottom cup to flatten the rounds.Continue to 4 of 4 below.

Drain on Paper Towels
Remove the tostones with a slotted spoon and drain on paper towels. Salt to taste.
