Leafy, Green Vegetable Recipes

I won't get into the benefits of eating leafy green veggies, since I am certain we are all fairly educated on them. Unfortunately, while we are aware of how good they are for us, most of us shy away from them. One reason is that we simply may not know how to cook them so that they're really tasty and actually enjoyable. In India though, cooking veggies is something of an art and a single veggie can be made in a hundred different ways! And it is, given that most homes have their own style...MORE of preparation for each vegetable! So if you're looking to add the good greens to your diet, here are a few tasty suggestions for how you can cook and enjoy them:

    A favorite North Indian dish! This mildly flavored dish is super healthy too. If Paneer is not on hand or you want a dairy-free option you can also use tofu or veggies like cauliflower or potato.
