     A classic caprese sandwich is typically loaded with a bunch of fresh mozzarella, a few tomato slices, and torn basil which are then lathered with a olive oil and balsamic vinegar, salt and pepper. And although this sandwich isn't all that bad to begin with, we created a healthier version by hallowing out a whole grain baguette and adding rotisserie chicken for protein. We replaced olive oil with...MORE flavorful truffle mustard and white balsamic glaze. And instead of the traditional fat slabs of whole milk mozzarella, we swap out tiny pearls of the fresh cheese to cut down on fat. Arugula gives the sandwich a nice peppery bite and adds a bunch of vitamins such as A, K, and C as well as folate and calcium. The tomatoes are not only a great form of antioxidants but are also packed with lycopene which helps prevent cancer. Not too shabby, huh?

    Calabrese Salami is a little bit spicy, perfectly salty, and absolutely delicious. It comes from the Southern tip of Italy and is packed with paprika and an assortment of peppers. The gruyere and swiss cheese, while both both nutty and rich, become almost caramel-like when paired with the cured meat. If you can't find gruyere, you can totally just use swiss cheese - but the gruyere adds a nice sweetness  The basil...MORE adds a note of earthiness and freshness and helps to keep the sandwich from not being too much.

    I was recently gifted provencal mustard over Christmas and I was amazed at how flavorful it was. Made with a base of dijon and blended with roasted red peppers, garlic, and herbs, this mustard packs a ton of flavor with little to no calories. Smear some of this flavorful spread on a warm whole wheat wrap and top with fresh nutrient packed spinach, bright and lively pesto, rich and tangy...MORE crumbled goat cheese, sweet and spicy peppadews and protein packed rotisserie chicken. 

    To make this recipe, I used leftover pulled rotisserie chicken but you could totally use a another protein such as grilled steak, seared shrimp, or baked fish. And if you don't eat meat, you could totally just add a roasted portobello mushroom or some pan fried tofu.

    Caprese is a very popular Italian dish made with fresh sliced tomato, creamy mozzarella, basil, olive oil and balsamic vinegar. And it just so happens that caprese is even more delicious when it's grilled between two light and airy pieces of ciabatta bread.

    Something to remember while you're making this sandwich: My version of this recipe calls for fresh mozzarella because I personally...MORE believe that it tastes better, however fresh mozzarella isn't that great of a melting cheese. If you'd like this sandwich to have more of a melt factor, then I recommend using a low-moisture shredded mozzarella, aka the stuff you see in the processed cheese section of the grocery store. And although the taste isn't as good as the fresh stuff, processed mozzarella does melt about 100 times better. So use your discretion when following this recipe
