What You'll Need

  • 1 (4 pound) bone-in, skin-on turkey breast, thawed if frozen
  • 3 tablespoons butter
  • 1 teaspoon salt
  • 1 teaspoon dried thyme leaves
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 1 cup chicken broth

How to Make It

  1. Preheat oven to 325 degrees F. Place turkey breast, skin side up, on rack in large roasting pan. In a small bowl, combine butter, salt, thyme, onion powder, garlic, powder, and pepper and mix well.
  2. Loosen skin from turkey and rub half of the butter mixture on the flesh; smooth skin back over turkey and hold in place with a toothpick. Rub remaining butter mixture over turkey. Pour 1 cup broth into bottom of roasting pan.
  1. Roast turkey for 30 minutes per pound, or about 2 hours, basting occasionally with pan juices until the turkey registers 165 degrees F on an instant-read thermometer. Cover and let stand 10 minutes, then carve to serve.
