If you're in the mood for a plate of sweet, sticky, delicious pork bbq ribs, then Kansas City ribs are what you're looking for!

What You'll Need

  • 3 pounds (1.4 kg) pork spareribs
  • For Rub:
  • 1/2 cup (120 mL) brown sugar
  • 1/4 cup (60 mL) paprika
  • 1 tablespoon (15 mL) black pepper
  • 1 tablespoon (15 mL) salt
  • 1 tablespoon (15 mL) chili powder
  • 1 tablespoon (15 mL) garlic powder
  • 1 tablespoon (15 mL) onion powder
  • 1 teaspoon (5 mL) cayenne
  • For Sauce:
  • 1 cup (240 mL) ketchup
  • 1/4 cup (60 mL) water
  • 1/4 cup (60 mL) brown sugar
  • 1/4 cup (60 mL) vinegar
  • 3 tablespoons (45 mL) olive oil
  • 2 tablespoons (30 mL) paprika
  • 1 tablespoon (15 mL) chili powder
  • 1 to 2 cloves garlic, minced
  • 1/2 teaspoon (2.5 mL) cayenne

How to Make It

  • 1. Prepare ribs by removing the membrane from the underside of the ribs. Trim off any loose fat or meat.

  • 2. Prepare smoker or grill. Hold a temperature around 225 degrees F/110 degrees C for 4 to 6 hours so plan accordingly. Season with Kansas City rib rub and place on grill or in smoker.

  • 3. While ribs are cooking, prepare barbecue sauce. Heat oil in a saucepan. Add garlic and sauté until brown. Add remaining ingredients and reduce heat. Simmer for 15 minutes until thick.

  • 4. Cook ribs until the internal temperature of the meat reaches about 185 degrees F/85 degrees C. Brush with barbecue sauce continually during the cooking process.
