If you're in the mood for a plate of sweet, sticky, delicious pork bbq ribs, then Kansas City ribs are what you're looking for!

What You'll Need

  • 3 pounds/1.4 kg pork spareribs
  • For Rub:
  • 1/2 cup/120 mL brown sugar
  • 1/4 cup/60 mL paprika
  • 1 tablespoon/15 mL black pepper
  • 1 tablespoon/15 mL salt
  • 1 tablespoon/15 mL chili powder
  • 1 tablespoon/15 mL garlic powder
  • 1 tablespoon/15 mL onion powder
  • 1 teaspoon/5 mL cayenne
  • For Sauce:
  • 1 cup/240 mL ketchup
  • 1/4 cup/60 mL water
  • 1/4 cup/60 mL brown sugar
  • 1/4 cup/60 mL vinegar
  • 3 tablespoons/45 mL olive oil
  • 2 tablespoons/30 mL paprika
  • 1 tablespoon/15 mL chili powder
  • 2 cloves garlic, minced
  • 1/2 teaspoon/2.5 mL cayenne

How to Make It

  1. Prepare ribs by removing the membrane from the underside of the ribs. Trim off any loose fat or meat.
  2. Prepare smoker or grill. Hold a temperature around 225 degrees F/110 degrees C for 4 to 6 hours so plan accordingly. Season with Kansas City rib rub and place on grill or in smoker.
  3. While ribs are cooking, prepare barbecue sauce. Heat oil in a saucepan. Add garlic and sauté until brown. Add remaining ingredients and reduce heat. Simmer for 15 minutes until thick.
  1. Cook ribs until the internal temperature of the meat reaches about 185 degrees F/85 degrees C. Brush with barbecue sauce continually during the cooking process.
