I've got quite a collection of Last Minute Recipes going! This latest addition is for vegetarian main dish recipes. Even if you aren't a true vegetarian, it's good for your body (and your pocketbook) to eat meatless once or twice a week. And even true meat eaters will love these recipes. They're hearty and healthy and delicious and easy to make.

While meat substitutes can be used in vegetarian recipes, it's easy to make a recipe hearty just by using ingredients like whole grains, pasta, and lots of vegetables.
