Perfect Pareve Lemon Bars for Passover

Looking for a new Passover dessert recipe? These lemon bars are a nice change of pace from the traditional sponge cake and easy-to-make chocolate brownies usually baked on Passover.

What You'll Need

  • For the Crust:
  • 3 sticks margarine, room temperature
  • 3/4 cup Passover powdered sugar
  • 1/2 teaspoon salt
  • 2 cups cake meal
  • 1 cup potato starch
  • For the Filling:
  • 8 eggs
  • 4 cups granulated sugar
  • 1/2 cup potato starch
  • 3/4 cup lemon juice

How to Make It

  1. Preheat oven to 350 F.
  2. Combine crust ingredients. Press into a sprayed 11x17 inch pan.
  3. Bake at 350 F for 20 minutes.
  4. Combine filling ingredients. Pour on crust.
  5. Bake another 30 minutes.
  6. Sprinkle with more Passover powdered sugar.

Cook's Note: For these lemon bars to be pareve and kosher for Passover, all ingredients must be pareve and kosher.
