In the cookbooks and magazines I've been reading, a trend seems to be meat served topped with, not accompanied by, a salad. You can accomplish this wonderful idea by placing a small amount of your favorite green salad on top of a freshly grilled steak, or you can add some greens to a homemade salsa recipe. Or you can try one of these delicious recipes for meat with salad.

For best results, let the hot and juicy, broiled, sauteed, or grilled meat stand for about 5 minutes before topping with the cool salad mixture (or topping the cool salad mixture!) and serving.
