    A mortar and pestle is good for grounding your own spices and mashing together garlic and herbs. The flavor cannot be replicated! There are some expensive mortar and pestles on the market(over $40.00), but price really doesn't indicate the quality. The result comes from the one who is using it, so don't spend too much on one.

    Although it's a little pricey, the KitchenAid stand mixer is one of the best investments you will ever make in your kitchen. Knead dough to perfection, blend on different speeds, fold... you name it and this mixer can handle the job. I have burnt out the motor on several handheld mixers,and have never on a KitchenAid stand mixer.

    Wooden spoons are a must have! You can't melt them and they work in every type of pot surface.

    Food Processor

    Before using a food processor, I disliked them. But, then I used one and realized how much time it saved me and now I would not go without one. Middle Eastern cooking requires a lot of chopping, and this will save time and energy. You can also chop up nuts, grind coffee beans; the uses are endless.

    Pyrex Ovenware

    I like Pyrex - it does the job and is inexpensive. If I am having company, I may use a more attractive casserole dish like Le Creuset, but for everyday use, Pyrex rates very high in my kitchen.

    If you want to make authentic Turkish coffee, you will need an ibrik. An ibrik is what you cook and serve your coffee in. It also serves as a great conversational piece for your guests during coffee.

    Middle Eastern cooking involves a lot of meat cooked on skewers. I recommend stainless steel skewers. The look much better than wooden skewers and are much safer.

    A solid roasting pan is an essential! These are great for roasts, leg of lamb, chicken, turkey and many other meats. Meat cooked on a roasting rack and pan really is more tender and juicy. Clean up is very easy, too.

    Invest in a good cookware set, no matter what type of cooking you do. Even heating and temperature control is very important. Some of the less expensive sets burn on the bottoms and do not allow even heating.

    Meat thermometers are essential when cooking meat, especially large cuts like leg or shoulder of lamb, turkeys, roasts etc. You really don't want to risk an undercooked dinner.
