Old-Fashioned Classic Chess Pie Recipe

This delicious Southern chess pie is finished with an optional meringue topping. Half brown sugar in the filling gives it fabulous flavor with or without the meringue.

What You'll Need

  • 1 cup granulated sugar
  • 1 cup light brown sugar, packed
  • 1/4 cup sifted all-purpose flour
  • 1/2 teaspoon salt
  • 3 large egg yolks and 1 whole large egg
  • 1/2 cup butter (8 tablespoons)
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 unbaked 9-inch pie shell
  • Meringue, optional:
  • 3 large egg whites
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract

How to Make It

  1. In a saucepan, combine 1 cup granulated sugar, the brown sugar, milk, flour, and butter; heat, stirring, until dissolved. Cool.
  2. Beat 3 egg yolks and 1 whole egg; add 1 teaspoon vanilla and the salt.
  3. Combine the egg mixture with the cooled mixture and blend well. Pour filling into unbaked pie shell.
  4. Bake for 35 to 40 minutes at 350 F. Lower temperature to 250 F to finish baking.
  5. When the pie is done, it will be puffy across the top. Remove from oven.

    Optional Meringue Topping:

    1. Beat 3 egg whites until foamy; gradually beat in the 1/2 cup granulated sugar and 1 teaspoon of vanilla. Beat until stiff peaks form.
    2. Cover pie with meringue.
    3. Return to oven and bake at 325 F for another 10 minutes, or until meringue is golden brown.
