Ozark pudding is a cake-like fruit pudding with pecans. The dish probably originated in Missouri or Arkansas. The dessert dish named after the Ozark Mountain region and was a favorite dessert of President Harry Truman.
Bess Truman made her famous Ozark pudding was a similar list of ingredients, but with granulated sugar and black walnuts or pecans. She added a dash of rum to her whipped cream for the topping.

- 1/2 cup sifted all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup light brown sugar, packed
- 2 teaspoons vanilla
- 1 cup chopped pecans or walnuts
- 1 cup finely chopped peeled apples
- Heat the oven to 350 F.
- Generously butter a 10-inch pie plate.
- Sift together the flour, baking powder, and salt; set aside.
- In a mixing bowl with an electric mixer, beat the eggs and sugar together until creamy. Stir in the sifted dry ingredients, blending thoroughly. Stir in the vanilla, chopped nuts, and chopped apples.
- Spoon the batter into the prepared pie plate and bake in the preheated oven for 30 to 35 minutes.
- Sprinkle more nuts over the top, if desired, and serve warm or cold with ice cream or sweetened whipped cream.
Expert Tips and Variations
- Use chopped fresh pears in the pudding instead of apples.
- Serve with a simple brown sugar caramel sauce. In a saucepan over medium heat, combine 1 cup of brown sugar with 8 tablespoons of butter. Cook, stirring, for 1 minute. Add 1 cup of heavy cream and bring the mixture fo a boil. Cook, stirring, for 2 minutes. Let the sauce cool for 10 to 15 minutes before using.
