This old fashioned vegetable beef soup recipe is made flavorful with beef shanks, tomatoes, and a variety of vegetables. Use barley or rice in this tasty beef soup.

What You'll Need

  • 3 to 4 lbs beef shanks
  • 2 tablespoons bacon drippings, oil, or butter
  • 2 quarts cold water
  • 1 teaspoon salt
  • 1 small onion, chopped
  • 1 can (14.5 oz) tomatoes, diced
  • 4 to 6 sprigs parsley
  • 5 medium carrots, peeled and sliced
  • 2 cups fresh or frozen green beans, cut
  • 1 cup diced potatoes, red or other waxy type
  • 1/2 cup chopped celery
  • 1/4 cup rice or barley

How to Make It

  1. In a large Dutch oven or stockpot, sear the beef shanks in the bacon drippings, oil, or butter. Pour off excess fat. 
  2. Cover the beef with water; bring to a boil. Add salt and onion; simmer 2 hours.
  3. Add vegetables and rice.
  4. Simmer for about 1 hour longer. Remove meat from bone; dice and add back to soup.
  5. Serves 8 to 10.
  6. Serve this soup with purchased or homemade biscuits or rolls.
