Building on a classic Whiskey Sour recipe, the Old Thyme Sour adds a number of new twists to create a delightful, very fun cocktail. The cocktail is innovative on many levels and it all begins with a mix of fresh thyme and Chartreuse. This is eventually lit on fire to give the drink a sweet-herbal-smoke background.
Building on that, this sour combines one of Jameson's finer Irish whiskies with elderflower and a homemade cinnamon-thyme syrup. Of course, in true sour fashion, we have to include a healthy dose of fresh lemon and a touch of egg white for that amazing texture that no other ingredient can give our drinks.
The Old Thyme Sour is a fascinating construction of flavors that are not normally mixed together and it works better than you may think just by reading the recipe.
- Place two sprigs of thyme and Chartreuse into an old-fashioned glass and stir to coat the thyme.
- Fill a cocktail shaker with two sprigs of thyme, remaining liquors, lemon juice, syrup, bitters, and egg white.
- Dry shake to incorporate ingredients, then add ice and shake thoroughly.
- Return to the Chartreuse-thyme glass and light the mixture on fire for a few seconds.
- Double strain the contents of the shaker into the glass to extinguish the flame.
- Add lemon zest and fill with fresh ice.
- Garnish with lemon and leftover thyme.
*Cinnamon-Thyme Simple Syrup:
- 1 cup water
- 1 1/2 cups sugar
- 2 sprigs of thyme
- Cinnamon stick
- Heat water and sugar to dissolve, stirring constantly.
- Place cinnamon stick and thyme in the pot to simmer about 20-30 minutes to taste.
- Strain, cool, and bottle in a well-sealed container.
