Roasting, or cooking in dry, relatively high heat, is an extremely effective way to cook most meats and vegetables. The high heat concentrates the flavors of the food, caramelizes the sugars in meats and vegetables and browns food beautifully.

Roasting the entire meal is one pan is an easy way to feed a family on a weeknight or on a busy weekend when errands have consumed most of the day. Just plop the meats and vegetables, along with some seasonings and maybe a sauce, into a roasting pan, put it in the oven, and in about an hour or so, depending on how long it takes to cook the meat, you'll have a complete dinner ready for four to six people.

Invest in a good roasting pan. A good option is a heavy-duty stainless steel pan without a nonstick coating. Nonstick coatings aren't the best choice when you're cooking with high heat. Stainless steel pans might cost a bit more, but they are durable, clean easily and will last a lifetime.

Once you get the hang of roasting your dinner, you can vary these recipes any way you'd like. Remember that the more quickly roasted meats, like fish and chicken breasts, should be paired with delicate vegetables like mushrooms, bell peppers and yellow squash; while beef roasts, chops and whole birds can be roasted along with potatoes, carrots and other root vegetables.

To make preparation even quicker, used sliced mushrooms and carrots, preseasoned chicken breasts and pork chops, refrigerated sliced potatoes, and prepared garlic and onions.
