After one trial run, the recipe became one of my family's favorite Passover meals."

Want a more nutritious dish? Try folding in spinach sauteed with garlic and olive oil, or other favorite cooked vegetables, before baking. 

Don't have farfel? Make your own by substituting crushed up matzo

Remember that little kids -- especially picky ones -- may have trouble adjusting to special holiday foods on Passover. If your kids adore mac and cheese, but are accustomed to a particular recipe or brand, you may want to think twice about calling this dish by the same name. Even if they adore matzo, cheese, and eggs, building up an expectation for a favorite food -- and then presenting something that doesn't look or taste like what they're used to -- could backfire. Make up a name, even a silly one, (Fluffy Cheesy Matzo Clouds, anyone?) emphasizing the ingredients they like, and odds are much better that they'll gobble it up. 

Make it A Meal: This is a rich, homey dish, so serve with accompaniments that will add some color an texture to the meal. Start with a bowl of Roasted Carrot, Apple, and Celery Soup, and serve the "Mac" and Cheese with an Heirloom Tomato Salad with Goat Cheese and Arugula. Or, if your little ones like finger food, offer favorite veggies like carrot, celery or jicama sticks, cucumber slices, halved cherry tomatoes, or broccoi "trees." Hazelnut Chocolate Chip Cookies make a fun, casual dessert. 

What You'll Need

  • 3 cups matzah farfel
  • 2 cups milk
  • 1-1/2 cups sour cream
  • 8 ounces cheddar cheese, shredded (2 cups shredded), plus extra for the top of the casserole (optional)
  • 6 tablespoons unsalted butter, melted
  • 3 large eggs, beaten
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

How to Make It

1. Preheat the oven to 350° F. Butter a 2 quart casserole or baking dish. In a large bowl, mix together the matzo farfel, milk, sour cream, cheese, melted butter, eggs, salt, and pepper. 

2. Pour the mixture into the prepared baking dish. Cover with foil and bake in the preheated oven for 30 minutes. 

3. Uncover an bake for 20 to 25 minutes longer, or until the casserole is set and golden. If desired, sprinkle the top of the casserole with additional cheese during the last 5 to 10 minutes of baking.

Serve hot.
