Actually, you can use any kind of vegan sandwich cookies to make an incredibly delicious vegan pie crust super easily. Trader Joe's carries a few types of vegan sandwich cookies, but I like using plain old Nutter Butters in this recipe.
Yes, Nutter Butter sandwich cookies are vegan, and yes, you can make an excellent vegan pie crust out of them! Using store-bought vegan Nutter Butter cookies, this is a super quick and easy vegan cookie pie crust. With a chewy peanut butter taste, this is one of my favorite ways to make an easy vegan pie crust. It's just a little different than the usual graham cracker crusts and is perfect for a variety of vegan pies and cheesecakes.
I like to pair my Nutter Butter crust with a vegan cheesecake recipe - because yum! - (pictured), but a basic chocolate tofu pie or even a vegan peanut butter pie would be fantastic with this cookie pie crust. So indulgent!
- 1/2 package Nutter Butter cookies
- 1/4 cup vegetable oil or margarine, melted
Crush Nutter Butter cookies to a crumble consistency using food processor or rolling pin. Add margarine or oil and combine well.
Press into pie tin. If mixture does not press easily, add more margarine or oil and crush to a finer consistency.
No baking needed, your crust is ready to go!
Make a little bit extra of the mixture and sprinkle it on top of your vegan cheesecake (or whatever you're making) as I have in the photo.
