The soft, floral flavor of Beefeater Dry Summer Edition Gin inspired me to play with a fruity, herbal twist on one of my favorite cocktails, the Gin Fizz.

My experiments took me to include pomegranate via PAMA Liqueur and adding a hint of lavender to accent the gin. If necessary, pomegranate juice can be used and I highly recommend fresh lime juice and soda from a siphon or other seltzer maker.

How to Make It

  1. Pour the spirits, juice, syrup, and egg white into a cocktail shaker filled with ice.
  2. Shake vigorously (more than usual if using the egg white to ensure it is mixed thoroughly with the other ingredients).
  3. Strain into a chilled highball glass filled with ice cubes.
  4. Top off with soda water.

More Tips for the Pomegranate Gin Fizz

While the egg is optional, I do recommend that as well. The egg white adds a lovely texture that is common in classic fizz drinks and, though the drink is good without it, it does make a more luscious cocktail.

At some point, you will have to find a substitute for the gin because this bottle of Beefeater will only available through the summer of 2010, so I suggest going with the lighter, new style of gins like Hendrick's or G'Vine. Any gin with a soft, unique profile will work wonders here.
