This potato soup with sausage and greens is purportedly similar to the Olive Garden's delicious Toscana soup. The browned Italian sausage and bacon make it a hearty soup, perfect for a lunch or dinner soup. Add a salad and crusty bread for a fabulous meal.

What You'll Need

  • 3 links sweet Italian sausage
  • 2 medium baking potatoes, cut in half lengthwise
  • 2 to 3 slices bacon, diced
  • 3/4 cup onions, diced
  • 1 medium to large clove garlic, minced
  • 2 cups escarole or kale, chopped
  • 2 tablespoons chicken base
  • 4 cups water
  • 1/2 cup whipping cream

How to Make It

  1. Remove sausage from casings; brown in a skillet, breaking up, until cooked through. Set aside.
  2. In a large saucepan or Dutch oven over medium heat, cook the onions and diced bacon together until the onions are translucent and bacon is crisp.
  3. Add garlic and cook for 1 minute longer.
  4. Add the chicken base, water, and potatoes, and escarole or kale; simmer 15 minutes.
  5. Add the browned sausage and cream. Simmer for 3 to 4 minutes and serve.
