This chicken dinner is a complete meal in one dish, baked to perfection. Use a cut-up chicken or use your favorite bone-in parts. I like this with whole chicken legs, but it's delicious with a combination of pieces as well.

This is an easy and tasty meal, perfect for a busy family. 

What You'll Need

  • 2 to 3 pounds chicken pieces
  • 1 small green bell pepper, seeds and membrane removed, cut in rings
  • 1 small red bell pepper, seeds and membrane removed, cut in rings
  • 2 medium onions, cut in 4 wedges each
  • 4 medium red-skinned or white potatoes, quartered
  • 4 carrots, cut in 1-inch pieces, diagonally
  • 2 large celery ribs, cut in 1-inch pieces, diagonally
  • 1 can (14.5 ounces) diced tomatoes
  • salt and pepper
  • 1 tablespoon butter, melted
  • paprika

How to Make It

  1. Heat the oven to 375° F (190° C/Gas 5). Line a 9-by-13-inch baking pan or shallow roasting pan with heavy-duty foil.
  2. Arrange chicken pieces, bell pepper rings, onions, potatoes, carrots, and celery on the foil. Pour tomatoes over all and season with salt and pepper.
  3. Cover the pan tightly with foil.
  4. Roast for 45 minutes, or until the vegetables are just tender.
  5. Lift foil and baste with juices. Brush the chicken and vegetables with the melted butter and sprinkle with paprika.
  1. Continue roasting, uncovered, for 45 minutes longer, or until chicken is tender and browned.
