This Easter dinner menu of a roasted leg of lamb is very sumptuous and elegant. A leg of lamb is boned then butterflied by your butcher, so it cooks perfectly in very little time.

You can bone the lamb yourself, but this is a fussy procedure that does take some experience. It's best to order the lamb ahead of time and have the butcher perform this task.

The rich meat is traditionally served with a mint sauce or mint jelly to help cut its unctuous richness.

Lamb has a unique texture because the fat is so decadent. Something sharp and slightly acidic is necessary for the best taste. And simple side dishes keep the lamb the star of the menu.

Make sure to set your table beautifully with your best china and lots of crystal and silver. Or keep the setting colorful with earthenware pottery and colored glasses. A basket of Easter eggs colored by the kids makes a festive and simple centerpiece. Offer some white or rose wine with the lamb, or a selection of iced tea, hot tea, and sparkling water.
