These roasted pumpkin seeds are easy to prepare and a great way to use Halloween pumpkins! Season the pumpkin seeds with your favorite seasoning blend or use the suggestions below.

Make basic salted roasted pumpkin seeds, sugar and spice, or spicy Cajun seasoned seeds. The recipe is easily halved or multiplied, depending on the amount of seeds you have.

What You'll Need

  • 2 cups pumpkin seeds, rinsed and drained
  • 2 tablespoons vegetable oil (preferably a neutral oil, such as canola or grapeseed)
  • 1 1/2 teaspoons salt
  • Sweet Spiced
  • 2 cups pumpkin seeds, rinsed, drained
  • 2 tablespoon melted butter or vegetable oil
  • 2 tablespoons granulated sugar, or more, to taste
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground allspice
  • Spicy Cajun Seasoned
  • 2 cups pumpkin seeds, rinsed, drained
  • 1 1/2 teaspoons Cajun seasoning, or to taste
  • 1/2 teaspoon ground paprika
  • a little salt, depending on saltiness of the Cajun seasoning
  • 2 tablespoon melted butter or vegetable oil
  • 1/4 teaspoon Worcestershire sauce

How to Make It

With a spoon, scoop seeds out of the pumpkin. 

Rinse the seeds well, removing as much of the pulp and fibers as possible. Drain thoroughly.

Pat  the seeds dry using a kitchen towel (paper towels will stick to the seeds). 

Basic Roasted Pumpkin Seeds

Heat the oven to 300° F (150° C/Gas 2).

Toss the cleaned and dried pumpkin seeds with 2 tablespoons of vegetable oil and 1 1/2 teaspoons of salt; arrange them in a single layer on a lightly oiled rimmed baking sheet.

Bake for about 35 to 45 minutes, or until dried, stirring and turning occasionally.

Sweet Spiced Pumpkin Seeds

Heat the oven to 300° F (150° C/Gas 2). Line a large baking sheet (rimmed) with foil. Oil or spray with nonstick cooking spray.

Toss pumpkin seeds with the 2 tablespoons of melted butter or vegetable oil. Spread them out in a single layer on the prepared baking sheet.

Combine the sugar, cinnamon, nutmeg, and allspice; sprinkle the mixture evenly over the pumpkin seeds and toss well to coat with the spices.

Bake for 35 to 45 minutes, or until browned, turning and stirring occasionally.

Cajun Seasoned Pumpkin Seeds

Heat the oven to 300° F (150° C/Gas 2). Line a rimmed baking sheet with foil and lightly oil it or spray with nonstick cooking spray.

Put the pumpkin seeds in a bowl and toss them with the Cajun seasoning, paprika, and salt.

Combine the melted butter or oil with the Worcestershire sauce. Drizzle over the seeds and toss to coat.

Arrange the pumpkin seeds on the prepared baking sheet.

Bake for 35 to 45 minutes, stirring occasionally, until the seeds are lightly browned and crunchy.
