This is the tastiest way I know to get salmon into kids (and grown-ups). Wrap these small patties in lettuce leaves, serve on slider buns, or just let kids eat them with their hands. See nutrition facts per serving below!

Salmon Corn Chowder
- In a small bowl, stir together the mayonnaise, mustard, chives, garlic, and pepper to taste.
- Pulse the salmon in a food processor until finely chopped. Transfer to a medium bowl. Add ¼ cup of the mayonnaise mixture, the panko, salt, and pepper to taste. Mix just until combined, and form into 8 small patties. Add the lemon juice to the remaining mayonnaise mixture and stir to combine.
- Heat the olive oil in a large skillet over medium heat. Sauté the patties until golden brown, 2 to 3 minutes per side. Serve with the mayonnaise mixture.
Make Ahead: Complete the recipe through Step 2. Refrigerate the patties and mayo mixture for up to 24 hours. Cook as directed in Step 3. You can also freeze the assembled patties for up to three months. Defrost overnight in the fridge and cook as directed.
