This old-fashioned salmon loaf is a popular budget fish dish and a comfort food for many people. It's a tasty budget main dish. This is a nice change of pace from salmon patties or croquettes.

Crumble potato chips or buttered bread crumbs over the top for a bit of crunch.

What You'll Need

  • 1 can (16 ounces) salmon, drained
  • 2 cups soft bread crumbs
  • 2 eggs, lightly beaten
  • 1/2 cup milk or evaporated milk
  • 2 tablespoons finely chopped onion
  • 1 tablespoon dried parsley flakes
  • 1 teaspoon salt
  • dash pepper

How to Make It

  1. Preheat the oven to 350 F.
  2. In a bowl, mash the salmon; add the remaining ingredients and blend well.
  3. Transfer to a buttered 8 1/2-by-4 1/2-inch loaf pan.
  4. Bake for 45 minutes, or until the loaf is firm.

Serves 4.
