There's nothing quite like bacon jam. Let's be real this is the edible form of crack. It's sweet and salty goodness comes from slowly rendering bacon and then cooking it down with brown sugar, caramelized onions, and red wine vinegar until a thick and chunky jam develops. Add some fresh ricotta, nutty parmesan and crispy brussels sprouts and you've got one serious sandwich on your hands.

You're either one of those people that like Thanksgiving or you're one of those people that like the Thanksgiving leftovers. Am I right?

Personally, I'm the kind that digs the leftovers more than anything else. I'm always just so exhausted by the time the actual dinner is made. But a few hours later, when late night rolls around and I'm starving - I get so excited because i know it's time to have some fun with the leftovers. One of my favorite creations consists of a...MORE grilled holiday citrus roll with cranberry mustard, leftover turkey, mashed potatoes, and some nutty, gooey gruyère.

If you're looking for a crisp and toasty sandwich that warms the soul, then this sandwich is for you! This sweet and spicy croissant grilled cheese is served warm which makes it crisp and gooey - the ultimate of flavor and texture combinations. With some spicy pepper jack cheese from Tillamook Cheese, a heaping spoonful of sweet and creamy apple butter, and a buttery and perfectly flaky croissant, this grilled cheese encompasses one of my favorite flavor combo’s SWEET & SPICY (and...MORE buttery) and it’s an excellent little treat that pairs nicely with an acidic Sauvignon Blanc if you fancy it in the afternoon.

Grilled Cheese Sandwich with Sausage and Kale

Inspired by one of my favorite warm soups, this hearty grilled cheese is a satisfying meal by itself. It combines spicy sausage, citrusy kale, savory caramelized onions and slightly tart Wisconsin kasseri cheese, which melts perfectly. I recommend serving it alongside a jammy Cabernet Sauvignon to help balance the saltiness of the sandwich.

Bacon and Butternut Squash Grilled Cheese

This simple yet decadent bacon and butternut squash grilled cheese tastes like fall! Sautéed butternut squash, crispy bacon, and melted gouda come together between two buttery toasted slices of lard bread to create a sweet and savory sandwich that highlights the beautiful flavors of fall. The bread this sandwich calls for is made with lard, so the fat content is much higher than regular store-bought bread. If you can't find lard bread, no sweat - just use something sweet like brioche but...MORE whatever you do, be sure to cook both of them over a lower heat because the higher fat content means it burns fast!
