- Spinach Balls
Serve this crisp and hot little appetizer with a dip made by combining mayonnaise, lemon juice, and Dijon mustard. The little balls can be made ahead of time and frozen. Then just bake them, still frozen, until hot and crisp.
- Seafood in Patty Shells
I adore this recipe; the light puff pastry is the perfect contrast to tender shrimp and crab. You can use any type of seafood you'd like. If you can't find frozen patty shells, you can make your own with puff pastry. Just cut the pastry into 4" squares and cut out a portion of the center. Bake them and they will puff into little containers just perfect for holding the rich filling.
- Orange Cauliflower Salad
Cauliflower is one of my favorite vegetables - I like keeping some raw florets on hand in the fridge for snacking. You can cook the cauliflower in this salad as directed, or leave it raw. Combined with orange juice, tarragon, and some fresh and crisp zucchini, this unusual salad is delicious.
