This is a great way to prepare bacon wrapped asparagus on the grill. Quick and easy, with few ingredients. What more can you ask for?
Preheat grill for medium-high heat. Wrap bacon slices around asparagus pieces and slide onto skewer. Average about 4 per skewer. Place onto grill and cook for 4 minutes per side, or until bacon has cooked through and become lightly crisped.
To prepare sauce: I recommend using a good quality chunky blue cheese dressing. Usually, the ones you find in the refrigerated section in a glass bottle. They are good, rich and creamy.
Next, add 1 to 2 teaspoons of chipotle chili powder to the 1 cup of dressing. Chipotle chili powder is usually quite spicy. If you can find a mild version, by all means, use that. If you are partial to spice, then adjust to your liking. Once the bacon-wrapped asparagus skewers are cooked, simply remove from the grill and serve with this dipping sauce. This sauce will keep for 3-4 days if stored in an airtight container in the refrigerator.
