These little biscuit cups are filled with an easy, flavorful Sloppy Joe mixture. The filling is super easy to prepare, and the cups make a tasty lunch or dinner that the kids will love.

Serve them with coleslaw and French fries or potato chips for a fabulous meal.

What You'll Need

  •  1 to 1 1/4 pounds lean ground beef
  • 1 tablespoon of vegetable oil, optional
  • 1/2 cup chopped onion
  • 1/4 cup chopped bell pepper
  • 2 cloves garlic, minced
  • 2/3 cup ketchup
  • 1/3 cup water
  • 1 tablespoon tomato paste
  • 1 1/2 teaspoons Worcestershire sauce
  • 1 tablespoon brown sugar, or to taste
  • salt and freshly ground black pepper, to taste
  • 1 tube refrigerated buttermilk biscuits (10-count)
  • 1/2 cup shredded mozzarella, cheddar, or pepper jack cheese

How to Make It

  1.  Heat the oven to 400 F (200 C/Gas 6). Grease 10 muffin cups.
  2. In a large skillet or saute pan over medium heat, cook the ground beef with the onion and bell pepper. If the ground beef is very lean, add a little oil to coat the bottom of the pan. Cook, stirring and breaking up the beef until it is no longer pink and the vegetables are tender. Add the garlic and cook for another minute.
  3. Stir in the ketchup, water, tomato paste, Worcestershire sauce, and brown sugar. Reduce the heat to low and simmer for 5 to 10 minutes. Taste and add salt and pepper, as needed.
  1. Separate the tube of biscuits and roll each one out to form a flattened circle (about 4 to 5 inches in diameter). Fit a biscuit round in each of the muffin cups, pressing over the bottoms and sides as far up as the dough will reach. Fill each cup with about 1/4 cup of the ground beef mixture. It's okay to mound it a bit if you have some surplus filling.
  2. Bake for 12 to 13 minutes.
  3. Top with the shredded cheese and return the pan to the oven. Bake the sloppy joe biscuit cups for another 2 to 3 minutes, or until the cheese has melted.
