Smoked Chocolate Ganache

A quick and easy way to incorporate a light smoke flavor into chocolate. This ganache works well on grilled fruit, ice cream, and just about any other dessert you like.

What You'll Need

  • 1 1/2 cups/360 mL cream
  • 3/4 cup/180 mL semi sweet chocolate chips
  • 1 small skillet
  • cherry, apple, or persimmon
  • wood chips

How to Make It

  1. Prepare charcoal grill or smoker for a 30-minute smoke.
  2. Pour cream into the skillet, add chocolate chips and place away from the fire (add wood chips at this point).
  3. Close lid, and let smoke for 15-30 minutes (add extra smoke chips if necessary).
  4. Check after 10-15 minutes to make sure ganache hasn't burned and to stir the mixture (add extra cream if needed).
  5. Once the chocolate and cream are incorporated, remove from the smoker and allow it to cool for at least 10 minutes, before using.
  1. While you can smoke the ganache for 30 minutes, most of the flavor is infused within the first 15-20 minutes.
