Tilapia actually makes an excellent smoked fish. Given that it's meaty and quite versatile, it can be served alone or incorporated into other dishes, such as salads and dips or served with toast rounds with a good lemon-garlic aioli.

What You'll Need

  • 6 tilapia fillets
  • 3 tablespoons (45 mL) vegetable oil
  • 2 tablespoons (30 mL) fresh lemon juice
  • 1/2 teaspoon (2.5 mL) garlic powder
  • 1 teaspoon (5 mL) kosher salt
  • 1/2 teaspoon (2.5 mL) lemon pepper

How to Make It

1. Prepare smoker for a 2-hour smoke.

2. Wash fish and remove all bones. Combine oil, lemon juice, garlic powder, salt, and lemon pepper in a small bowl. Brush onto both sides of tilapia fillets. Place in smoker for 1 1/2 to 2 hours.

3. When finished, remove from heat and serve.
