Sour Cream Potato Salad Recipe

A tangy sour cream dressing turns a basic potato salad recipe into something special. This salad can be made with russet, red, or gold potatoes.

What You'll Need

  • 4 lbs. potatoes (cooked in salted water, cooled, peeled and cubed)
  • 2 medium ribs celery (diced)
  • 4 green onions (white and light green parts, chopped)
  • 1/2 cups mayonnaise
  • 1 cup​ sour cream
  • 1/2 Tbs.​ Dijon mustard
  • 1 tsp. sugar
  • 1/4 tsp. cayenne
  • 1 tsp. salt (or to taste)

How to Make It

  1. In a large bowl, combine the potatoes, celery, and onions.
  2. In another bowl combine the green onions, mayonnaise, sour cream. mustard, sugar, cayenne and salt and pepper to taste. Add this mixture to the potatoes and toss to mix well. Taste and adjust the seasoning.
  3. Cover and refrigerate the potato salad for at least 2 hours before serving for best results.
