This country pear cobbler is filled with a spiced fresh pear filling. The sweetened soft biscuit-like dough is spooned over the filling and baked to perfection.

What You'll Need

  • For the Filling:
  • 3/4 cup firmly packed brown sugar
  • 3  tablespoons all-purpose flour 
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground nutmeg
  • Pinch of cloves
  • 2 tablespoons lemon juice
  • 6 to 8 medium pears (peeled, cored, and thinly sliced)
  • For the Topping:
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup  buttermilk
  • 3 tablespoons butter (melted)
  • Optional: 1 tablespoon granulated sugar or vanilla sugar for topping
  • Optional: light or heavy cream

How to Make It

  1. Heat the oven to 375° F. Butter an 8- or 9-inch baking pan.
  2. Combine the brown sugar, 3 tablespoons of flour, salt, nutmeg, cloves, and lemon juice in large skillet. Stir in sliced pears. Cook over medium heat for about 5 minutes, or until hot and bubbly, stirring frequently and gently. Remove from heat and set aside.
  3. Place 1 cup of flour, 2  tablespoons of granulated sugar, baking powder, and baking soda in mixing bowl. Whisk or beat on lowest speed of electric mixer for about 30 seconds to blend thoroughly. Add buttermilk and melted margarine. Continue to mix on low speed (or by hand) for about 30 seconds, or just until blended.
  1. Pour hot filling into the prepared baking pan. Top evenly with large spoonfuls of the topping dough.
  2. Sprinkle with 1 tablespoon sugar or vanilla sugar, if desired.
  3. Bake for 30 to 35 minutes, or until the pears are tender and the filling is bubbly and topping is golden brown. Serve warm with light cream, if desired, or top with a scoop of ice cream.
