These shrimp are marinated in a flavorful spiced orange marinade. The secret is to let them spend enough time in the marinade to pick up the heat from the jalapeno peppers.

What You'll Need

  • 2 pounds (900 g) shrimp -- jumbo, shelled and de-veined
  • 1 cup (240 mL) lime juice fresh
  • 4 jalapeno peppers, seeded and minced
  • 2 tablespoons (30 mL) Tabasco
  • 1/3 cup (80 mL) balsamic vinegar
  • 2 tablespoons (30 mL) black pepper, fresh ground
  • 1/2 cup (120 mL) orange marmalade
  • 1/2 cup (120 mL) vegetable oil
  • 4 cloves garlic, minced
  • 2 teaspoons (10 mL) sea salt
  • 1/4 cup (120 mL) fresh cilantro, chopped

How to Make It

1. Mix oil, vinegar, and lime juice together in a saucepan and heat on a medium setting. Add marmalade, Tabasco sauce, salt, and black pepper then mix well. Add jalapeno peppers, cilantro, garlic.

2. Remove from heat and allow to cool. Place shrimp in a large zip-top bag. Pour marinade over top. Seal and refrigerate for 20 to 30 minutes.

3. Preheat grill. Remove shrimp from marinade and place on hot grill.

Grill about 5 to 10 minutes, turning occasionally until done. Cooked shrimp will be pink and firm to the touch.
