Spinach Pesto Sauce With Spaghetti

Spinach, Parmesan cheese, and garlic get together in this delicious spinach pesto. The pesto is fabulous with spaghetti, and it can be used in other dishes or with other pasta shapes.

What You'll Need

  • 4 cups washed, torn spinach leaves, stems removed, well packed, 16 to 24 ounces
  • 3 medium garlic cloves, halved
  • 3 tablespoons pine nuts
  • 1/2 teaspoon dried leaf basil, crumbled
  • 1/4 cup extra virgin olive oil
  • 1/3 cup grated fresh Parmesan cheese
  • 1/8 teaspoon kosher salt, or to taste
  • 1 pound spaghetti or other pasta

How to Make It

  1. Place a few spinach leaves, garlic, pine nuts, basil and a little oil in blender or food processor container. Cover and puree until leaves begin to look crushed. Continue adding spinach leaves a few at a time with small amounts of oil to blender, using a rubber spatula to help push down and combine the pureed mixture.
  2. Add the Parmesan cheese and kosher salt. Cover and process until the pesto mixture is smooth. Taste and adjust seasonings.
  1. Meanwhile, cook pasta in boiling salted water according to package directions; drain in colander. Serve with the spinach pesto sauce.
